Marinated Raspberries with Honey Cream
Did you ever try marinating fruits? They are not just highly receptive to so many flavors, but they also add a healthy punch to your dessert. As far as this dessert is concerned, no processed sugar goes into it. Just a bit of honey and a dash of alcohol (optional) are used to make it richer. The essence of this recipe is that you can easily replace raspberries with other types of berries, including blackberries, strawberries, blueberries, or an assortment of different berries of your choice.
Ingredients:
- 1 lb fresh raspberries
- For Honey Marinade:
- 2 tablespoons of honey
- 1 pinch of table salt
- 5 tablespoons of water or merlot
- 1 pinch of cinnamon
- 1 pinch of allspice
Honey Cream:
- 3 tablespoons of honey
- 250 ml of whipping cream
Directions:
Mix all the ingredients above for the honey marinade. Heat them on low heat to let the honey mix properly. Remove the mix from the heat source and pour it on the berries. Next, put the berries inside a fridge in a tight container and keep it untouched for 5-8 hours. After the berries get marinated, remove them and sieve thoroughly while reserving the fruits.
Mix the honey and the whipping cream. Heat the mix for around 60 seconds on low heat. Then, remove it from the heat source, and using a spatula, stir the mix thoroughly. Now, strain the mix into a whipping cream siphon. Next, infuse the mix with two doses of nitrous oxide cream whipped cream chargers, while shaking after every charge. Keep the honey cream inside the refrigerator for at least 2 hours while shaking it after every half an hour.
For serving, drop a small quantity of your honey cream to create a base at the bottom of a serving glass or bowl. Then, place 2 to 3 tablespoons of your berries over the honey cream base. Now, put a generous amount of cream on top of your berries. Serve instantly!
